A Raw Moroccan Carrot Salad (Bite This)

For the Recipe 1 pound carrots, coarsely grated (about 4 cups) 3 to 4 TB fresh lemon juice 1/2 tsp ground cumin 1/4 tsp ground cinnamon 1 tsp sweet paprika 1 TB minced green chilies, or 1/4 to 1/2 teaspoon cayenne 1 TB honey or agave 1/3 cup extra-virgin olive oil 1/4 cup chopped fresh cilantro or parsley 1 tsp sea salt or more to taste 1 cup mint leaves, washed and chopped |
Instructions
1. In a large bowl, mix together all the ingredients.
2. Cover and let marinate in the refrigerator for at least 2 hours to allow the flavors to marry.
3. Taste. You might need to add a dash more sea salt and/or lemon juice before serving. You can serve salad chilled or at room temperature.
