If you would ask me, what my favourite food is at this particular moment, my answer would most definitely be figs. Despite being able to enjoy dry figs all year around, there is nothing like enjoying fresh ones, which nature produces at the end of a summer. They are magnificent produce due to their sweet taste with a soft pulp and fine peel. Crunchy seeds just melts in your mouth and are perfect completion of a texture. To choose the figs with high amount of antioxidants, pick the ripe figs with a nice, fresh aroma.


They totally remind me of my childhood, as back in the days my father would go and pick the freshest figs from the farmers market and I would fight with my brother who would get them first. If my mother got a hold of them, before me and my brother ate them all, she would prepare a delicious almond and fig pie. This time it was my turn, so I prepared one my way and brought her my version of traditional almond and fig pie, which we both enjoyed dearly.

For the Crust

3/4 cup fine chopped almonds

¾ cup pitted and chopped medjool dates

2 Tbsp honey


Water for consistency

For the Vanilla and Honey Filling


½ cup cashews

1/2 cup coconut milk

2 Tbsp agave syrup


2 Tbsp honey


Pinch vanilla powder

For the Fig Dressing

4 medium size, ripe and sweet dark figs

1/2 cup coconut milk

2 Tbsp agave syrup

2 Tbsp honey

Fresh juice from half of orange


Pinch cinnamon powder

Instructions:
1. Mix all the ingredients for the tart in a food procesor, until you get a sticky texture that resembles texture of  a dough!

2. Line the mini tart shells with a plastic wrap, place the dough and gently press and spread to achieve the shape of a tart.
3. Slowly remove the plastic wrap from tart shells and place the tarts into the dehydrator leaving them to dry for 24hrs or more, until they become crunchy.

4. Blend all the ingredients for the filling in a powerful blender to achieve smooth and creamy consistency and place it on the bottom of tarts!

5. Mix all the ingredients for the dressing in the food procesor and sweeten it according to you liking. Pour te dressing on top of the tarts and garnish it with some freshly cut figs, blackberries and a hint of fresh mint.


If you want to enjoy them warm, place the tarts back to the dehydrator for a few hours, otherwise serve them right away! Bonn appetite!
