Chef Dave Anderson leads Madeleine Bistro, an upscale, organic restaurant that is, quite simply, reinventing vegan cuisine. The classically trained Anderson is nothing short of a culinary genius. His creations include an egg substitute that allows his chocolate soufflé to “rise” to the occasion, a vegan Big Mac (complete with special sauce), and a forthcoming meltable, dairy-free cheese that promises to make pizza even more enjoyable.
