Once the decision has been made to become vegan, we believe the key to staying on a vegan diet is having a wide variety of meals that satisfy your ‘taste’ as well as provide the nutrition that you need. Recipes that offer a variety of colors, flavors and textures will help to sustain your enthusiasm and interest in being a vegan. We especially enjoy meals from many different cultures around the world. In fact, many times we plan meals for the week by thinking “tonight we’ll eat Mexican, tomorrow French, and the next night maybe Oriental”. We also consider a full range of carbohydrates - one night pasta, another rice a third night potatoes, etc. including all the nutritional staples of grains, legumes (beans), green and leafy vegetables, fruit and nuts. We have found that having a variety of delicious tasting meals makes a big difference.
Sicilian Pasta with Eggplant, Basil and Soy Cheese. This classic meal tastes great in any season. We were happy to use our own eggplants from the garden, just rather sad that we don’t have more, but looking forward to next spring when we begin again to grow this wonderful vegetable.

Enjoying your own freshly made gnocchi is always a treat, but even more so when the olives are special treats from France. Nyons is famous for it’s olives and olive oil. This year on our fall vacation, we made a point to bring back some of the specialties from the area.
Apricot Tarts with Chocolate Sauce(vegan) Recipe by Veganlicious
These pretty tarts are very nice and light, especially nice after a full meal. Using a heart shaped tart form makes them a perfect dessert for Valentine’s Day.
Serves 4 people
For the Crust:
1 & 1/4 Cups Unbleached White Flour
1/2 tsp Baking Powder
2 TB Powdered Sugar
1/4 tsp Salt
1/4 Cup Coconut Oil (measure it in solidified form, in a dry measure)
