For the Soup

2 Tbsp coconut oil

1 medium yellow onion, chopped

2 large cloves garlic, minced

3-4 turnips (about 1 pound), chopped into 1” pieces

1 medium sweet potato (about ½ pound), peeled and chopped into 1” pieces

2½ cup vegetable broth

1 cup unsweetened almond milk

¼ teaspoon salt, or to taste

½ teaspoon black pepper

So, I am out trying to expand my horizons today. No, not in the real world, but online, I did a spin around the other green sites, which I haven’t done in a long while. I have to tell you, I am pretty burned out on the standard green re-hash news headline sites. You know what I mean. Protest this, be upset about that.. so on. I lived that, believe me. I am over it. Now I just want to do things. Hands on, get down and start living. But yes, I am going off track, as usual. Like I was saying, I was out looking around online just to see what the usual suspects are posting about now, when I came across something new. A site by Alicia Silverstone. A newish site called The Kind Life with Alicia Silverstone. I don’t know how long the site has been around, but I have to tell you, I was surprised to see it. The site is a bit like a vegan spin off of GOOP, by Gwyneth Paltrow. Not as polished but you can feel the same vibe going on.

She gets into all of her own “G” lifestyle things. Everything from her vegan dogs, to her new vegan recipe book, eco home decor and on and on. Yes, she is trying to sell you something, her book, but I think the site is about more than that. She seems to be pretty cool, down to Earth and definitely living an amazing “G” life. About the recipe book, I haven’t seen it yet, but I did watch the behind the scene video from the photo shoot and that looked pretty good. I will have to put her book on my list. She even took the time to make the video I have posted above. In the video she takes us all along for a spin around the hottest vegan food spots in New York City. Some of the places she goes too, I never even heard of. It’s been that long since I have been back to NYC.

Fresh mint makes the best desserts! I admit, I’m not much of a gardener, but I do have an outdoor summer herb garden which includes peppermint, spearmint, and chocolate mint. It not only tastes delicious, it’s a cooling digestive aid! I love to make full use of my mint during the warm weather, and and what goes better with mint than chocolate, come on, really. Everyone is with me on this one right?

This tart incorporates a chocolate nut crust with a silky, green mint cream filling. I like the combination of fresh mint leaves and mint essential oil, but feel free to use more of only one or the other. Still want to enjoy the tart but don’t have access to fresh mint leaves? Use the essential oil and a dash of spirulina for a soft green color.

I love to enjoy this dessert with guests on a hot, sunny afternoon, along with cold mint tea.

For the Crust

1 cup almonds, ground

3/4 cup pitted, packed dates

1/4 cup cacao powder

1/4 cup cacao nibs

1 teaspoon pure vanilla extract

Let me start this post by saying, I love Kookie Karma Kookies, and yes, I am addict. Oh don’t feel sorry for me. I don’t need a 12 step program to clean up my addiction. No I need more room in my fridge. Here is why, the more my addiction grows, the healthier I become. Okay, maybe there is a limit to what my Organic Del Forte Jeans can contain, but I haven’t found it yet. Hey, the seams are meant to look in distress. No comments please!

But here is the deal, these Kookie’s are Low-Carb! Yes “Low-carb” and “cookies” don’t usually go too well together. It’s either pure white flour indulgence or some half-baked tasteless cardboard rock claiming to be “healthy,” while only half-true and not the least bit enjoyable anyways. Juli Novotny has created something entirely different and she has called her treats “kookies” as the healthy alternative to cookies.

While they don’t taste exactly like cookies, they are not supposed to. Kookie Karma cookies taste like indulgent dessert versions of the finest whole food bars. They sell these at my Whole Foods, of course, right smack in front of every cash register as you check out to tempt you to splurge. I’ve tried the Raw Cherry Cashew, the Raw Granola Bar, the Raw Lemon Fig and the Holistic Chocolate Chip. I can’t wait to try all the flavors. The Holistic Chocolate Chip is not a raw one. There is quite a bit of natural sea salt in it, which makes it surprisingly good.

Ever since I was a child, I’ve loved food, particularly the sweet stuff. I come by it honestly, since my mom’s favorite food is chocolate. I grew up on a pretty “Standard American Diet”. You know, cereal with milk for breakfast, peanut butter (fortunately the natural kind) & jelly sandwiches for lunch, and chicken/veggies/potato for dinner. My favorite treat was ice cream and my mom’s freshly baked chocolate chip cookies! 

When I was 14, my mom gave me the book Fit For Life to read, after incorporating some of the principles into her life. I’m not sure what prompted her to give me the book, but I devoured it – and became a vegetarian over night! Not only that, I gave up most dairy products too. Imagine a teenager eliminating 70% of the foods they’ve grown up on?! While everyone else at high school was eating burgers, chocolate bars, soda pop, and ice cream, I was eating my perfectly combined meals most of the time (although I was a candy-aholic on weekends). Fresh fruit for breakfast, fruit/veggies/or homemade soup for lunch, and veggies with either rice, squash, or pasta, for dinner. For a while I just ate fruit – I thought, “why eat anything else when you can eat healthy sweet stuff all the time?” (NOT a great idea as I learned later on). Remember that Sesame Street song “One of these things is not like the other, one of these things just doesn’t belong…” Ummmm yeah, I felt like an outcast.

You could also use organic lemon, orange, blood orange or grapefruit instead of the lime…

2 organic limes, peeled and sliced
