Pomegranates are the hotest new superfruit for cocktails. It used to be all about the cranberry — now pomegranate is the ‘It’ fruit showing up in everything from Pomegranate Martinis (Pometinis) to Pomegranate Champagne. Touted for their myriad of health benefits and high anti-oxidant levels, they also taste great in mixed drinks due to their sweet and tangy flavor. This drink is only lightly flavored with a hint of pomegranate and tangy lemon and sweetened with healthy low glycemic agave instead of a sugar syrup. Low on calories and sugar and high in anti-oxidants and infused natural vitamins, this drink is not only beautiful and festive but could save your waistline as well this holiday season. The deep red color of the pomegranate pops against the the clear liquid. You can also add a splash of pomegranate juice if you want a stronger pomegranate flavor and color.
To open the pomegranate and obtain the seed arils, start by cutting it with a knife and slicing it in four quarters. Seperate the arils from the peel and white pith by placing the sections in a bowl of water and pulling the seeds out with your hands. The arils will sink to the bottom and you’ll save your clothing and kitchen from looking like a crime scene.
Pomegranate Infused Vodka Spritzer
For the Spritzer:
1/4 Cup (2 oz.) Organic Vodka (Square One)
2 TB Fresh Lemon Juice
2 TB Light Agave Nectar
2 Tsp. Pomegranate Arils
Chilled Sparkling Water
In a cocktail shaker, shake all ingredients except for the pomegranate and strain into a chilled highball glass. Drop in the pomegranate seeds to infuse into the drink.
You can garnish the glass with a twist of lemon peel on top if you wish or serve as is.
