I get excited whenever I’m in a new place and I learn there’s a green restaurant nearby. Being a vegetarian from Nashville, I’m accustomed to having to pre-think which restaurants will suit my dietary needs and still give my friends and family what they crave. Regardless of the city, it’s never any fun to have the orders go quickly around the table and then hold up the server for 10 minutes as I try to figure out if there’s a way to get spaghetti and meatballs without the meat or wheat. (But wheat’s a whole other story.)

So, when I hear about a restaurant with a focus on a vegetarian diet, I’m there. This time it was Chicago.

Long known for brats, beer and deep dish pizza, Chicago has also been leading the green way for many lifestyle choices. (There’s even a rickshaw taxi service!) This includes food as well. So, when my good friend, Nashville chef John Stephenson, and G Living’s Chicago-based chef, Vanessa Sherwood, recommended Green Zebra as one of their favorite vegetarian eateries, I just needed to know when and where. It’s good to have goals. And Jake Gyllenhaal, who my sources say is a wannabe chef trapped in the body of an acclaimed actor, has long vowed to open a restaurant before reaching the big three-oh. And, if all goes according to plan, that goal will soon become a reality.

The 27-year-old star of “Brokeback Mountain” and “Zodiac” is in the planning stages of launching an all-natural organic eatery in Los Angeles with his childhood friend, Babbo sous chef Chris Fischer.

Jake, who has twice guested on The Food Network’s Molto Mario, is a long time foodie who as a teenager washed dishes for well known chef Marco Canora at Tom Colicchio’s Craft in New York.

Looking for a happening city to visit but worried about having to stray from your healthy, ethical diet?

First, you worry too much. Second, check out Austin. The capital of Texas is the third fastest growing large city in the nation and was labeled MSN’s “Greenest City in America”. And what would America’s greenest city be without plant-based eateries that are as delicious as they are ethical?

“Watch out for the surprises,” one very helpful employee at Dhaba Joy said to me as I perused the vibrant bakery and coffee shop. Not sure what he meant by that, but I was nonetheless intrigued. Named from the Hindi term for eateries that serve local cuisine at convenient hours, Austin’s Dhaba Joy is quite the place, attached as it is to Toy Joy, a unique boutique teeming with modern, kitchsy remnants from your childhood.

But the food? Fabulous. The Oatscreme is soft-serve made entirely from oat flour, and it has a slightly nutty taste that goes well with their organic chocolate syrup. An awesome must-sample is the double Mocha Pushpa, made with their organic, 100% fair-trade coffee and organic chocolate syrup. The key ingredient is lavender-infused soymilk, which is made in-house. It lends a subtle fragrant puff of lavender that makes a next-sip automatic. And regardless of whether or not we allow ourselves to indulge, I think it’s fair to say most everyone likes chocolate chip cookies. About 4 inches or so in diameter and made with Dagoba organic chocolate, theirs are as good as the ones grandma used to make, only better because they’re made without eggs.
