
Blend All Ingredients except cranberries on high until smooth. Pour once or twice through a fine mesh strainer to remove the raspberry seeds. You can also leave them in and they are good that way too. But if you want a very smooth sherbet remove them. Pour into ice cream maker and follow instructions. Or pour into glass storage container and cover, and place in the freezer to freeze for at least 4-5 hours. Serve with frozen cranberries, fresh raspberries, fresh mint or whatever you like.

2 Cup Fresh Red Raspberries
1/2 Cup Young Coconut Water
1/2 Cup Young Coconut Meat
1/4 Cup Virgin Coconut Oil
1/2 Cup Fresh Squeezed Orange Juice
1/2 Cup Maple Syrup or Agave Syrup
1/4 .tsp Pink Himalayan Salt
1/2 Cup Frozen Cranberries

8 Tbsp raw honey
2 Tsp raw coconut oil
6 Strawberries
6 Blackberries
Pinch of freshly grounded nutmeg

Zucchini Tartar with Paprika-Raspberry Puree (vegan)

The simple flavor of the raw grated zucchini is pepped up with the paprika and raspberry puree. This recipe does taste as lovely as it looks.

I’ve got a bit of a treat for you this week: Chocolate and Raspberry Cake with Ginger Chocolate Mousse. I’m sitting here snacking on the left-overs from that, feeling quite happy with myself as I plot and plan some big changes in my life over the next 12 months.
I’m sure I’m going to get some email about my choice of featured ingredient: Maple syrup; but I feel it’s important to look at ingredients that aren’t necessarily 100% raw sometimes, as they do offer a health benefit, and certainly have a lot to offer in terms of taste.
Chocolate Raspberry Cake with Ginger Chocolate Mousse (raw)
Makes 4 cakes

For the Base:
1/4 Cup Oat Flour*
1/2 Cup Cashew Flour**
2 TB Cacao Powder
2 TB Maple Syrup
1/2 Tsp Vanilla Extract
3 TB Water
1 Tsp Lemon Juice
Pinch Salt
1 Small pack of Raspberries for the centre of the cake.

Cherry-Raspberry Shake (raw)
Giving a recipe for a shake is kind of odd for me, because I usually just throw in whatever frozen fruit I have with whatever creamy base I have and add a squirt of agave and a dash of vanilla etc. My shakes don’t vary that much. I would like to try new flavors and combinations though. This one has cherries, raspberries and banana in cashew milk.

Raspberry Acai Shake:
1 1/2 Cup Cashew Milk (or 1 whole young coconut)
1 Cup Frozen Raspberries
1 Cup Frozen Cherries
1 Banana (Frozen or Fresh)
2-3 TB Agave (to taste)
